  1. Preheat oven to 350°.
  2. Dice vegetables and place in a roasting pan with rack.
  3. Simmer orange juice, honey, salt and 2 sprigs of rosemary in a small saucepan for 15 minutes, then remove from heat.
  4. Rinse and dry duck thoroughly, then place breast-up on rack in roasting pan.
  5. Score the skin over the breast and legs to help some of the fat escape while roasting (this will also help crisp the skin).
  6. Brush half of the orange glaze over duck, reserving the other half for later.
  7. Truss duck legs together and cover the pan with foil.
  8. Roast for 2-2 ½ hours, brushing more glaze over the duck and stirring the vegetables every 30 minutes.
  9. Duck is done when internal temperature reaches 135° for medium-rare or 170° for well-done.

For the hobakjuk:
  1. If using a pie pumpkin, cut it in half and scoop out the seeds. Bake the two halves face-down at 375° for 45 minutes, or until very soft.
  2. Scoop out the cooked pumpkin from the skin and place in a blender or food processor and blend until smooth.
  3. Add pumpkin to a large saucepan with the rest of the ingredients and cook over medium, stirring constantly and scraping the bottom of the pot to prevent sticking. When it just starts to bubble, turn it off.
  4. Stir in rice dumplings and serve with sesame seeds and chopped pecans.
For the rice dumplings:
  1. While pumpkin is baking, measure rice flour into a bowl and add hot water until a sticky dough forms. You should be able to pinch off pieces of dough and roll them into almond-sized dumplings without them falling apart or sticking too much to your hands. You may need to adjust the amount of water or flour.
  2. Set dumplings aside and boil another pot of water.
  3. Add dumplings to the pot and give them a stir to prevent sticking. Boil 10 minutes, then remove with a slotted spoon and set aside.
  4. Add dumplings after the hobakjuk has finished cooking.

  1. Heat bacon fat in a cast iron skillet (or other large skillet).
  2. Add chorizo and diced onion. Cook until chorizo is almost done and onion is translucent.
  3. While the chorizo and onion cook, shred the sweet potato in a food processor using the grating attachment.
  4. Add shredded sweet potato and chopped mushrooms to the skillet.
  5. Add crushed garlic, salt and oregano, then cover and cook 5 minutes or until sweet potato has softened.
  6. Add chopped chard, cover again, and cook another 3-5 minutes or until chard is soft.
  7. Combine all with a metal spatula, remove skillet from heat, and serve.

  1. Freeze beef for about 2 hours, or until partially frozen. This will make it easier to cut.
  2. Remove beef from freezer and slice into thin pieces, about ¼" thick.
  3. In a large bowl, mix the rest of the ingredients. Add beef and toss to coat pieces well.
  4. Cover bowl and refrigerate for 4 hours.
  5. Remove bowl from the fridge and dry pieces with a paper towel. Discard marinade.
  6. Place pieces in a single layer on a baking sheet or dehydrator trays.
  7. Dehydrate at 165º for 6-8 hours, or in an oven at 170º for 5-6 hours.
  8. Jerky is done when pieces are dry but not tough. Let cool completely, then store in an airtight container. The jerky will stay good in the fridge for several months.

  1. Peel plantains, then cut into chunks and place in a blender or food processor.

  2. Add peeled garlic cloves, salt and avocado oil, then blend on high for 1 minute until a smooth dough forms.
  3. Transfer dough to a cutting board. Spread into a ¼-in. thick sheet, then cut into circles using a shot glass or other small glass. You want circles about 2 inches in diameter. You could also cut the dough into squares.
  4. Heat about ½ cup of avocado oil in a small saucepan on the stove.
  5. Using a spatula, carefully peel the dough circles off the cutting board and drop them into the hot oil, being sure not to crowd them in the pan. My saucepan held about 4 at a time.

For the macaroons:
  1. Melt 2 oz. baking chocolate and 2 Tbsp. coconut oil in a double boiler.
  2. Transfer to food processor, then add all ingredients for macaroons and blend until a sticky dough forms.
  3. Preheat oven to 325º.
  4. Roll dough into balls, then place on a baking sheet.
  5. Bake for 15 minutes, then remove from oven and let cool completely.
For the coating:
  1. Melt remaining 2 oz. baking chocolate and 2 Tbsp. coconut oil in double boiler.
  2. Once chocolate has melted, add syrup and vanilla. Mix well.
  3. Dip cooled macaroons in melted chocolate, then place on a baking sheet.
  4. Place baking sheet in refrigerator for a few hours to allow chocolate coating to harden.
