Instructions
  1. Mix coconut flour, arrowroot flour and tapioca flour together in a bowl.
  2. In a separate bowl, beat the eggs.
  3. Add water and melted butter or palm shortening to the bowl with the eggs.
  4. Add dry ingredients to wet and mix well.
  5. Heat a small frying pan over medium heat. Add a little butter to thinly coat the pan.
  6. Use a ¼ cup measure to spoon the mixture into the pan. Tilt the pan from side to side to distribute the mixture and form a thin crepe.
  7. Cook 30 seconds, then carefully lift one side of the crepe with a spatula.
  8. Flip the crepe and cook another 30 seconds on the second side.
  9. Remove crepe from heat and place on a plate, then repeat Steps 5-8 for the rest of the batter.

  1. Preheat oven to 350º.
  2. Mix all streusel ingredients well and set aside.
  3. Beat eggs, then add pumpkin, coconut milk and melted coconut oil. Beat again.
  4. Mix dry ingredients in a separate bowl, then add to wet ingredients and stir until well combined.
  5. Pour batter into a greased loaf pan. Spread evenly with a rubber spatula, then add streusel topping.
  6. Bake for 55-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

  1. Mix dry ingredients in a small bowl.
  2. Beat eggs in a medium-sized bowl, then add rest of wet ingredients and mix well.
  3. Add dry ingredients to wet and mix again.
  4. Spoon batter into a muffin tin lined with paper cups, about ⅔ of the way full in each cup.
  5. Bake at 350° for 15 minutes.
  6. Remove cupcakes from oven, transfer to a cooling rack, and let cool completely.
Frosting
  1. While the cupcakes are cooling, blend all frosting ingredients with a hand mixer (if the coconut butter is too hard, place the jar in a hot water bath for 5 minutes).
  2. After cupcakes have cooled, frost with a butter knife.

  2. Grate carrots, or use a shredding attachment on your food processor to get the job done.
  3. Add all ingredients except chocolate chips to a food processor or blender.
  4. Blend on high for about a minute, or until all ingredients are well blended.
  5. Grease an 8x8" baking dish and dust with tapioca or arrowroot flour.
  6. Add batter to the dish, then sprinkle chocolate chips on top.
  7. Bake for 20-25 minutes.

  1. Mix dry ingredients in a small bowl.
  2. Whisk eggs, vanilla, coconut milk, vinegar and shortening in a different bowl.
  3. Pour the boiling water in a small bowl, then slowly sprinkle in the gelatin while stirring constantly.
  4. Add gelatin and water to the wet ingredients and mix well. Add dry ingredients and mix again.
  5. Heat a frying pan over medium-low heat with about a teaspoon of palm shortening.
  6. Spoon the batter onto the pan to make 4-inch pancakes.
  7. Flip the pancakes when the small bubbles on the surface have popped.
  8. Cook another 3-5 minutes, then remove from heat. Serve with syrup or fruit.
