  1. Preheat oven to 350º.
  2. Mix all streusel ingredients well and set aside.
  3. Beat eggs, then add pumpkin, coconut milk and melted coconut oil. Beat again.
  4. Mix dry ingredients in a separate bowl, then add to wet ingredients and stir until well combined.
  5. Pour batter into a greased loaf pan. Spread evenly with a rubber spatula, then add streusel topping.
  6. Bake for 55-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

  1. Mix dry ingredients in a small bowl.
  2. Beat eggs in a medium-sized bowl, then add rest of wet ingredients and mix well.
  3. Add dry ingredients to wet and mix again.
  4. Spoon batter into a muffin tin lined with paper cups, about ⅔ of the way full in each cup.
  5. Bake at 350° for 15 minutes.
  6. Remove cupcakes from oven, transfer to a cooling rack, and let cool completely.
Frosting
  1. While the cupcakes are cooling, blend all frosting ingredients with a hand mixer (if the coconut butter is too hard, place the jar in a hot water bath for 5 minutes).
  2. After cupcakes have cooled, frost with a butter knife.

  1. To roast dandelion root: spread root pieces on a baking sheet and bake at 200º for 4 hours, turning every hour or so. Remove from the oven when all pieces have turned dark brown (but aren't burned!). Store in an airtight container in a cabinet.
  2. Place 2 Tbsp. roasted dandelion root in a small saucepan with 2 cups of water.
  3. Bring water to a boil, then reduce heat to medium-low and simmer 20 minutes.
  4. Strain liquid into a cup.
  5. Add coconut milk and vanilla. Stir and enjoy.
