It infuriates me to read the labels on bottled salad dressing.
…or on most packaged food, for that matter.
The ingredients in a “natural” goddess dressing are as follows:
Expeller pressed vegetable oil (canola, soy, and/or sunflower), water, tahini, apple cider vinegar, soy sauce (water, soybean, salt, wheat, alcohol), lemon juice concentrate, salt, garlic, toasted sesame seeds, parsley, chives, xanthan gum.
Canola, soy and/or sunflower oil? Soy sauce with wheat? WHY!?
So, fed up as I was with having to compromise with ingredients, I decided to make my own. And it tastes WAY better than the bottled stuff.
Even though this dressing is good on just about any salad, my favorite is mustard greens. I worked at a farm over the summer, and I became positively addicted to mustard greens with this dressing. I would probably continue eating it if I could…but it’s winter.
- 4 garlic cloves peeled
- ¼ cup lemon juice
- 1 tsp. apple cider vinegar
- ½ cup tahini
- 1 ½ cups olive oil extra virgin
- 1 ½ tsp. kosher salt
- 1 cup fresh parsley packed
- 1 green onion roughly chopped
- 2 tsp. dried dill weed
- Place all ingredients in a food processor.
- Blend until smooth.
- Serve on salad or eat with a spoon when no one's looking.
